Winemaking process
- Vatting: total destemming, maceration for around 21 days in concrete vats.
- The first week: racking and pumping over.
- Alcoholic fermentation between 25 and 28°C.
- Aged in concrete vats for 9 months.
Tasting
The color is a bright red with purple highlights. The nose is complex and refined, blending blackcurrant, cherry, caramelized notes, and a touch of nutmeg. The palate is lively and fresh on the attack, supported by structured tannins. The finish expresses a delicious impression of fresh raspberry, persistent and flavorful.
