Winemaking process
- Vatting: total destemming, 28-day maceration in concrete vats.
- The first week: racking and pumping over.
- Alcoholic fermentation between 25 and 28°C.
- Each grape variety is vinified separately and blended in the spring.
- Aged in concrete vats for 9 months.
Tasting
A flattering nose combining aromas of raspberry jam and blackcurrant, enhanced by subtle notes of dark chocolate and a touch of freshness reminiscent of eucalyptus. On the palate, the attack is silky and the wine is remarkably well-balanced, with a lovely sweetness in the middle. There are notes of garrigue and refined spices such as cardamom. The elegant, velvety finish is a fine extension of this complex aromatic palette.
